Slow Cooker Guinness Pot Roast

Serves 4

1 tablespoon olive oil

2.5 pounds boneless beef roast

2 teaspoons salt, divided

2 teaspoons black pepper, divided

1/2 yellow onion

1-2 carrots, peeled and diced

½ pound mushrooms, sliced

1 pound red potatoes, scrubbed and halved

2 garlic cloves, minced

1 tablespoon fresh rosemary

2 tablespoons tomato paste

1 tablespoon Worcestershire sauce

1 cup Guinness or your favorite stout beer

1 cup beef stock

In a large pan, heat the oil. Season roast with 1 teaspoon each of salt and pepper. Sear roast on all sides until browned and slightly crispy. Remove from heat.

Fill slow cooker with onion, carrots, mushrooms, potatoes, garlic, rosemary, ketchup, Worcestershire sauce, Guinness, beef stock and remaining salt and pepper. Stir to mix liquids. Place browned roast in slow cooker and cover with lid. Cook on low for 6 to 8 hours, or high for 3 to 4 hours, or until meat is tender and falling apart.
